Posole

Ingredients
    1. Hominy - Large can (6 lbs 9 oz)
    2. Center Cut Pork Chops with bone,  4
    2. Red Chile - prepared  (see below)
    3. Onions 1/4 cup, diced
    4. Salt

             
            Step 1. Prepare Meat

  • Trim fat from pork and discard

  • Place Pork in large sauce pan

  • Cover with water and boil until well cooked 1.5 to 2 hrs

  • Allow to cool -- place in refrigerator-- until residual fat rise to the top and solidifies

  • Skim off this remnant of fat and discard

  • Save broth for use in step 2

  • With finger break cooked pork into 1/2 in to 1 in. (shredded) pieces.
            Pork Is Now Prepared

               Step 2.  Make it

  •  In large -- 1 to 2 gallon pot -- add Posole, shredded pork, pork broth, red chile, diced onions and salt (to desired level) Add more water to give desired consistency.

  • With heat on low bring mixture to a simmer with occasional stirring.  Allow to simmer to merge flavors. Serve hot with Saltine crackers.  Add salt as desired.  Reheating will increase blended flavors!

 

Red Chile - Classic

Ingredients

        1.  Dried Red chile pods - to fill blender
        2.  Water - to fill blender (approx 4 to 6 cups)
        3.  Garlic - 3 to 4 cloves
        4.  Salt - 1/2 to 1 tsp
        5.  Oregano - 1/4 to 1/2 tsp

   Remove stems, seeds and any molded areas from chile pods
   Rinse and clean chile with warm water to remove dirt & soften

                                      Make it
  Add all ingredients in order listed to fill 1 to 2 qt electric blender - pressing down chile pods to moderately compact chile pods. Secure cap on blender and blend this mixture on high speed for several min -- 4 to 5 min. (Blend chile until it has a smoothie-like consistency).

      Chile is now prepared  --ready to use in Posole or to make into a Classic chile sauce.

                              Classic Chile Sauce
  1.  Brown 1/2 to 1 lb of ground beef in large (2 to 4 qt) sauce pan. While cooking add salt & pepper to flavor.
  2.  Drain excess fat and blot fat with paper towel to render lean
  2.  Add prepared chile above to cooked ground beef and bring to a simmer with occ stirring.  Allow to cook to blend flavors.  Use as a garnish over beans, eggs, potatoes etc...
