Green Chile Enchiladas

Ingredients

        1.  Two Large Hand Trimmed Chicken Breasts
        2.  Campbell's condensed Cream of Celery soup - 2 cans
        3.  Diced onions - 1/4 cup
        4.  Green Chile Lemitar - Diced chile w/ salt & garlic - 1 to 2 cups
        5.  Sharp Cheddar Cheese - shredded - 1/2 lb
        6.  Corn Tortillas - 16 to 18
        7.  Corn Oil 1/2 cup


                                          Prepare Chicken
      Remove  fat from chicken. Using a medium size sauce pan
      cover chicken in 4 to 5 cups of water.  Bring to a boil & cook
      chicken on low heat--low simmering- approximately 1.5 hours.
      When done refrigerate chicken in its broth.

                                    Shred chicken & Prepare Soup mix
            Place 2 cans of soup plus 2 cans of broth -- stock from cooked
            chicken
into medium size stew pot.
            Shred chicken with fingers and add to soup mix.
            Add onions, green chile to soup  and cook over
             low heat to a low simmer.  Cut back heat and keep mixture warm.

                                               Prepare tortillas
            
Heat 1/2  to 3/4 cup of corn oil in frying pan.  Fry individual
              corn tortillas one at a time over low heat.
            . Cook tortillas approx 30 seconds on each side, drain oil,
              and place on paper towels to soak up excess cooking oil. 

                                                Create Casserole
             Soup Mix, Tortillas, Cheeses and Repeat.:
            Layer a medium size pan or glass cake dish with 1 to 2 cups
           soup mix, followed by a layer of tortillas and shredded cheese
           Repeat a second layer finishing off with final layer of freshly
           shredded cheese.  Cover with aluminum foil and bake in oven
            15 to 30 min to melt cheese.  And serve with Tecate or Corona.

 

                                          Classic Green Chile

1 cup of diced chile add Salt and 1 to 2 Tablespoons diced garlic.
Serve as garnish over pizza, beans, burgers, juevos ranheros, PB&J etc...or add .to anything
