| Beans - 2 Cups, cleaned
Lard - 1/4 tsp
Salt - 1/2 to 3 tsp
Clean beans to remove rocks, dirt clumps or damaged
Rinse thoroughly to remove dirt from beans
Soak beans all day or over night 12 to 24 hrs
Fill 4 qt pressure cooker to with 1 1/2 to 2 in from top of cooker
Add beans, lard, salt to water, seal cooker, place release valve on lid
and close lid on cooker with proper seal.
Turn heat to medium and begin. When release valve begins to rock
turn heat to low and cook 45 minutes (timed cook) with slow, steady rock
of cooker release valve. Avoid over rapid high-heat cooking as this will
break-up beans and shed skin. Turn heat off and allow pressure
cooker to cool until safe to open, Serve and add salt as desired....
